Sugar free cakes sound like a contradiction. Mention the word cake, and one conjures images of sugar, icing, and everything else you would associate with a sweet treat. That is why it is difficult to imagine a sugar free cake. But they do exist. One would be pleasantly surprised to try any of these recipes, as they do an excellent job of eliminating sugar, but not taste. Here are some sugar-free cake recipes you can try out the next time you bake one.

Carrot Cake Sans Azucar: Completely Sugar Free

Ingredients:

  • 3 cups grated carrots
  • 2 tsp ground cinnamon
  • One cup chopped pecans
  • 2 tsp vanilla extract
  • 4 eggs
  • 2 cups of all-purpose flour
  • Two tsp of baking soda
  • 2 tsp of baking powder
  • 1 1/4 cups vegetable oil
  • One cup agave
  • 1/2 tsp salt

Instructions:

First, preheat oven to 350 degrees F. Pre-prepare a 9”×13” inch pan by lightly greasing and adding a light film of flour. Beat the eggs and add agave, oil, and 2 teaspoons vanilla. Add the baking soda, baking powder, flour, cinnamon, and salt. Now mix in the grated carrots and gently add pecans. Pour the mix into the prepared pan. Bake for 40-45 minutes. Check with a toothpick for doneness. Allow cooling in the pan for 10 minutes, then turn to remove from pan to totally cool.

Devilish Angel Food Cake Sugar-Free

Ingredients:

  • 1 cup all-purpose flour
  • 1 1/2 cups sugar substitute
  • 2 teaspoons pure vanilla extract
  • 1/4 cup cornstarch
  • 12 egg whites
  • 1 teaspoon cream of tartar
  • A pinch of salt

Instructions:

Begin by preheating oven to 325 degrees F.  Strain cornstarch, sweetener, and flour into a bowl. Add salt and set aside. With a mixer whip the egg whites with cream of tartar to the point you get medium peaks. Add vanilla slowly. With a spatula gently fold in the flour mixture with the egg whites in 3-4 groups, careful not to deflate egg whites. Put mixture into food pan and bake for 40-45 minutes. Check if springy to the touch. Take out from the oven and invert pan on.  Remove from mold and serve with sugar-free whipped cream, fresh fruit or sour cream.

Ingredients:

  • 1 teaspoon vanilla
  • 1 teaspoon brandy
  • Cinnamon powder – 1 teaspoon
  • Lemon Zest – 1 teaspoon
  • 1 teaspoon orange zest
  • 1/2 teaspoon peppermint essence
  • Softened butter – 110 g
  • Softened cream cheese – 110 g

Method:

Take a mixing bowl and put the softened butter and softened cream cheese in it. Now mix it with a hand-blender. You can use an electric blender too, ut mixing with a hand blender would serve you well in this case. Once the butter and cheese have formed a gooey mixture, put the vanilla, brandy, cinnamon powder, lemon zest, orange zest, and peppermint essence in it. Stir the mixture well. Put the icing in an icing cone and design your way to the tastiest icing! You can store this icing up to a few days too and use it for the next cake (only if it is within 2-3 days).
