Snacks for school breaks can always do with some improvement. Recess and other breaks are short respites from classwork during which kids can recharge. Why not upgrade traditional snacks for school into healthier versions? Your children will appreciate the food you prepare even more. Snacks for school need to be enjoyable to eat but also nutritious. Here are a couple of suggestions that are complete with fiber, protein, good fat, and low in sugar.

Ingredients:

  • One cup shredded mozzarella cheese
  • One ounce feta cheese
  • 1 clove garlic 
  • 1/4 lb frozen cut spinach
  • 1/2 Tbsp olive oil 
  • Pinch of salt and pepper
  • 2 ciabatta rolls
  • A pinch red pepper flakes

Instructions:

Start by chopping the garlic and place in a skillet with olive oil. Cook with medium-low heat until garlic softens. Mix in the frozen spinach as you bring the heat up to medium, and cook for approximately 5 minutes to the point that the excess moisture has completely evaporated. Add pepper and salt to taste. Cut the ciabatta rolls in half. Place around 1/4 cup of shredded mozzarella and 1/2 ounce of feta to each half roll.

Portion the cooked spinach equally between the two pieces of bread and top with a hint of red pepper flakes. Add 1/4 shredded mozzarella on each bread side again. Close the sandwiches with the top half of the ciabatta roll and place them on a non-stick skillet. Create a weight source that is flat and press them down on the sandwiches to flatten. Crank the heat to medium-low and cook the sandwiches to the point that they are crispy on the bottom.  Turn over the sandwiches and repeat. Serve fresh from the skillet while still warm.

Ingredients:

  • 3 ounces thin-sliced low-sodium ham
  • 2 thin slices Swiss cheese
  • 4 slices whole-wheat bread
  • 2 tbsp fat-free yogurt
  • 2 tsp light Italian dressing
  • One cup coleslaw

Instructions:

Begin by toasting the bread slices. Using a bowl, mix the light Italian dressing, yogurt, and coleslaw.  Put a slice of Swiss cheese on the toasted bread slices, then place the coleslaw mixture on both bread slices. Place the ham on top of the coleslaw mix and close the sandwich top with the two slices of remaining bread. Slice each sandwich in half and serve.
