Sugar-Free Healthy Pumpkin Muffins

Ingredients:

  • 1 1/8 cups pumpkin puree
  • 3 1/2 tsp pumpkin spice
  • 2 1/2 cups regular oats
  • 3/4 cup old fashioned oats
  • 1/2 tsp salt
  • 2 tsp vanilla
  • Two tsp baking powder
  • 2 large eggs
  • 6 tbsp honey or maple syrup
  • 3/4 cup canned milk
  • 1/2 tsp baking soda
  • 1/2 cup chocolate chips, dried cranberries, walnuts, and raisins

Instructions For Baking:

To begin baking, preheat oven to 325 degrees F. Put the oats on a baking sheet. Roast them to the point they turn light brown. Make sure to stir once, so they turn brown evenly at around 5 minutes. Let it rest at room temperature for about 10 minutes. This process creates a nutty, toasted flavor. Place two and a half cups of oats in a blender and pulse to the point that you achieve a consistency resembling flour. Next, mix the eggs, honey or maple syrup, pumpkin puree, vanilla, and milk. Add both regular and old fashioned oats with the moist ingredients and let to sit for 10-20 minutes. This will permit the oats to soften and absorb the wet mix. Combine the other ingredients until no lumps remain in the batter.

At this point, you should have a dense batter. If you wish (but not necessary) you may fold in around 1/2 cups of chocolate chips, walnuts, dried cranberries and/or raisins. Now place the batter in the muffin tin that makes 12-14 muffins.  Be sure to line it with muffin wrappers as you fill the muffin holes 7/8 of the way. Place in oven at 350 degrees for around 23 to 25 minutes. Use a toothpick inserted at the muffin center to check doneness. Enjoy your healthy muffins!

Things To Keep In Mind While Baking Muffins At Home

  • Do not overbeat the batter. Overbeat batter has high chances of resulting in the hardest muffins.
  • Make sure to check the temperatures and adjust them to the ones mentioned above. Any change in temperature can lead to overbaked or underbaked muffins.
  • Before removing the muffins from the tray, do insert a toothpick to check if they are properly cooked. If even a bit of the muffin sticks to the toothpick, you will know they need to be baked more. But, if the toothpick comes out clean, your muffins are ready to be devoured.
