Healthy Breakfast Egg Recipes: Must Try

Healthy breakfast meals are not complete unless you have some form of an egg with it. Eggs are such a blessing. So easy to cook, relatively inexpensive and a protein powerhouse, they are a win-win food. Eggs are also a non-issue with insulin sensitive or sugar conscious individuals. Healthy breakfast preparation is a no-brainer if you stick with established staples like eggs. You also need not confine yourself to the humdrum ways of boiled, scrambled, or sunny-side-up preparation. Here are other ways to have eggs in a healthy breakfast meal.

To differentiate between the two, an omelet is cooked over high heat quickly, while a frittata is slowly cooked over lower heat. Frittatas are served at room temperature while omelets are eaten warm right after cooking. That said, both offer a multitude of ways to have eggs. Neither one has any limitations. To keep your eggs on the healthy side, stay away from adding anything glucose spiking or fat-laden. Great frittata and omelet ingredients are mushrooms, tomatoes, sweet potatoes, greens, lean meats, healthy cheeses, and avocados. There are dozens of recipes for either of the two for a healthy breakfast.

Healthy Breakfasts Could Even Be Poached Eggs

Although by no means esoteric, a poached egg is perhaps the least used method among the “common” ways to prepare eggs. Here’s how to properly do it:

  • Crack a fresh egg into a bowl, so it is easy to slide into the pan.
  • Simmer water in a pan around 5cm deep. Add a drop of vinegar to prevent the whites from spreading too thinly.
  • Gently slip the eggs into the middle of the pan. Little rising bubbles means the temperature is just right.
  • Cook for 3-4 minutes or until the white is firm but with still a loose yolk.
  • Gently scoop the eggs out of the pan, drain them with tissue, and serve.
