Low Sugar, Guilt-Free Vanilla Cupcakes

Ingredients:

  • 1/2 cup non-fat vanilla yogurt
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 3 tablespoons canola oil
  • 3/4 cup sugar substitute
  • 1 1/2 teaspoons vanilla extract
  • 2 tablespoons cornstarch
  • 2/3 cup skim milk
  • 1/4 teaspoon salt
  • 1/4 cup applesauce
  • 1 1/4 cups all-purpose flour

Instructions:

To begin baking your low sugar, guilt-free cupcakes, preheat the oven to 350° F. Line a 12-cup muffin pan using paper cupcake liners and put aside. Next, combine all the wet ingredients until you get a smooth consistency. Once done, sift in all the dry ingredients. Fill the cupcake liners with batter until three-quarters are full and place in the oven for around 25 minutes. Cool completely and savor your vanilla pancakes.

Ingredients:

  • 3 ounces melted unsweetened chocolate
  • 2 teaspoons baking soda
  • One unsalted butter stick
  • One cup sour cream
  • 2 1/4 cups sifted cake flour 
  • 3 eggs
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • 2 1/4 cups light brown sugar
  • 3 3/4 cups confectioner’s sugar
  • 1/2 cup softened butter
  • 4 tablespoons milk
  • One teaspoon vanilla extract
  • One cup of boiling water

Instructions:

To begin making low sugar classic chocolate cupcakes, preheat oven to 350 ̊ F. Prepare baking cupcake pan and set aside. Sift cake flour, then place 2 1⁄4 cups into measuring cup. Using a large bowl, work the butter until a smooth consistency is achieved and mix eggs and brown sugar. Blend properly until the batter is light and fluffy. Add chocolate and vanilla extract. After mixing them, sprinkle salt and baking soda. Add the cake flour alternately with sour cream, using a slow speed. Slowly add boiling water, stirring with a spoon until blended to a thin batter. Use a ladle to fill cupcake holders two-thirds full. Bake for around 12 minutes, cool for 10 minutes.  To prepare buttercream frosting, in a large bowl and using a low-speed electric mixer, blend butter, sugar, vanilla, and milk. Mix with medium speed for 1-2 minutes until you get a creamy consistency. Use this to frost cupcakes. Enjoy!
