They are such an indulgence and yet are so simple to make. Eaten freshly baked or direct from refrigerator storage, these treats with their characteristic crispy exterior and moist interior have a loyal fan base. Following the saying that “less is more,” coconut macaroons are perhaps enjoyed best in their simplicity. Here is a basic and easy-to-follow recipe that also diligently omits the sugar. You can enjoy these yummy snacks without worrying about any sugar overload consequences.

Classic Sugar-Free Coconut Macaroons

Ingredients:

  • 200g shredded coconut meat
  • 4 egg whites
  • 2 tbsp substitute sweetener
  • 1 tsp vanilla

Instructions:

Start by pre-heating your oven at 350 degrees F, and then line a baking tray using baking paper or a non-stick liner. Prepare a generous bowl by cleaning with a kitchen paper towel. This will help get rid of any residual oil or grease. If this is not done, your egg whites may not whisk properly, which is crucial for the recipe.  When you start to whisk the egg whites, mix in the sweetener, this will help create peaks that will hold their form. At this point, mix in the vanilla and the shredded coconut meat. Very gently blend all ingredients. You are now ready to create macaroon balls. Use a spoonful of mixture to make firm but small pieces. Put them evenly spaced on the pre-prepared baking tray.   

Place in the oven and bake at 350F for approximately 10-12 minutes. The baking time may vary slightly depending on the oven, so keep an eye on them that they do not overcook. Once done, you can enjoy the coconut macaroons while still hot, or you could wait till they cool to room temperature. Without refrigeration, your macaroons will last for about a week. In the freezer, they can last a couple of months.

  • Calories – Two macaroons contain about 100-150 calories. The recommended calorie range for one person is 100-200 calories every day but it is better to eat just one and stay on the healthier side.
  • Sugar and Fats – Same as calories, the fat and sugar content of 2 macaroons are well within the daily range. But it is always safe and advisable to eat just one cookie. Only 13 grams of fat won’t do any harm.
  • Carbohydrates – Two macaroons will have 17 to 20 grams of carbohydrates. Given that all other foods you eat are low on carbs, you can sometimes even eat three macaroons at a time. Since they also contain enough fiber, you will feel full for a long time.
