  • 1/2 cup sugar substitute
  • 1 1/2 cup almond flour
  • 3 tbsp water
  • 1 tsp baking soda
  • 4 tbsp butter
  • 3 tbsp ground flax
  • Pinch of salt to taste

Start by preheating your oven to 325 degrees F. Line a baking tray with baking paper or a non-stick liner. Using a high performance or high-speed blender, place in the sugar substitute and process until you achieve a powdered texture. Blend in the butter with the now powdery sweetener until you get a complete blend. Now slowly and gently mix in the almond flour, ground flax, water, and baking soda one at a time and in small portions. Constantly stir together to the point that they are completely mixed. This is the cookie dough. Once it has been mixed, you can now introduce the dark chocolate chips. Add them by folding in gently until they are evenly distributed in the cookie dough. Next, give shape to the dough and arrange them on the baking tray.

Place in oven and bake for 16-20 minutes at 325 degrees F. Observe the cookies as they begin to turn brown. Take out the tray from the oven and permit cooling for 10 minutes on the baking dish. At this point, they are still quite soft, so allow them to sit at room temperature. After the initial 10 minutes, carefully transfer the cookies to a cool rack and allow further cooling. Once done, you may serve your healthy, delicious chocolate chip cookies fresh, or store them in an airtight container. They will last around a week.
