For Blini

  • 3 Tbsp. butter
  • 1 cup gluten-free refined/all-purpose flour
  • 1/4 Tbsp. salt
  • 1 cup low-free milk

For Egg Salad

  • 5 eggs
  • 1 small chopped onion
  • ¼ cup mayonnaise
  • 1/2 Tsp. lemon zest + 1 Tbsp. lemon juice
  • Salt and pepper
  • 2 Tbsp. chopped dill
  • 1 1/2 Tbsp. chopped capers

Method

Make blini or mini pancakes by combining flour, salt, butter, and low-fat milk. Drop this pancake batter on a hot non-stick pan using a tablespoon. Cook your blini on the pan until they are golden brown. Make egg salad by first boiling the eggs in a saucepan and then washing them with cold water. Peel the cooled eggs and then finely chop them. Next, combine lemon juice, mayonnaise, dill, zest, salt, and pepper. Add eggs in this mixture along with capers and onions. Spoon egg salad on the top of mini pancakes and garnish with dill before serving.

Cheesy Egg & Sausage Muffins

Savory sausage recipes when combined with eggs make for an unbeatable breakfast meal. Create muffins with these ingredients and don’t forget to add cheese.

Ingredients

  • 2 cups cooked sausage
  • 4-5 Tbsp. butter
  • 1 cup chopped spinach
  • 2 small eggs
  • 1 1/4 cup plain flour
  • 1 cup buttermilk
  • 1/2 Tsp. baking soda
  • 2 Tsp. baking powder
  • 3/4 cup cheddar cheese
  • Some maple syrup
  • Salt and pepper

Method

Heat the cooked sausage and add stir in the spinach. Prepare a muffin pan and heat your oven to 190°C. Take a large bowl and combine flour, salt, pepper, butter, baking powder, and soda. Combine the buttermilk and eggs before adding them to this bowl. Mix well and then add maple syrup, sausage mixture, and cheese. Transfer the batter to the muffin pan and bake until cooked.

Veggie Egg Pops

  • 6 peeled and hard-boiled eggs
  • 2 celery stalks (cut lengthwise into 3-4 inch sticks)

Method

  • 1 egg

  • 1/2 cup frozen hash browns (shredded)

Method

Coat some oil on the inside of a microwave-safe coffee mug. Add the shredded hash browns and microwave for a minute. Now add water and the egg and beat before microwaving for a minute. Top with cheese and melt the cheese for 30 seconds. Add salsa and serve.

  • 3 eggs (beaten lightly)
  • 3 bell peppers (seeds removed & top cut off)
  • 1 cup cheddar cheese
  • 1 Tsp. salt
  • Chili flakes
  • 1/4 cup chopped green onions

Method

Place the peppers on a lined baking sheet. Combine, cheese, eggs, and salt and pour this mixture on the peppers. Garnish with green onions and chili flakes and bake at 375 degrees for half an hour.
